SWEET PONGAL




Chakarai Pongal is a sweet and buttery porridge-like dish that is traditionally prepared in South India for the Makar Sankranti festival that heralds the arrival of summer. The khara pongal variety differs only in the spices added, and the two are often cooked together from the same batch of rice and dhal.










Ingredients:


  • 1 cup Raw Rice
  • 1/2 cup Moong Dal
  • 1 cup Milk
  • 3 cups Jaggery 
  • 4 tbsp Ghee
  • 2 tbsp Cashewnuts
  • 2 tbsp Raisins
  • 5 no Cardamoms powdered
  • 2 no Cloves powdered
  • 1 pinch Nutmeg powder
  • 2 1/2 cups Water




Method:


  • In a pan, add 1/4 tsp ghee and roast the moong dal.
  • Cook the rice and green gram dhal with 2 1/2 cups of water and 1 cup milk in the pressure cooker and set it aside.
  • Meanwhile, melt the jaggery with 3/4 cup of water in a pan.
  • Add the cardamom to the jaggery as it melts.
  • Mash the rice and paruppu (dal) mixture well and add to the pan of molten jaggery.
  • Stir well and cook on low heat till the mixture comes together well.
  • Heat the remaning ghee in a separate pan and fry cashews to golden brown.
  • Add raisins and fry for a few more seconds or until they swell up.
  • Add the nuts and raisins, powdered cardamoms, cloves, nutmeg into the chakari pongal.
  • Mix well and cook in medium flame for 5 minutes. Add 1/4 cup water or milk if it gets dry while cooking.



Serving:

Serve hot with an additional dollop of neyyi or ghee.
