GROUNDNUT CHIKKI


Chikki is a traditional ready-to-eat Indian sweet generally made from groundnuts and jaggery. There are several different varieties of chikki in addition to the most common groundnut chikki. Each chikki is named depending upon the ingredients used. 












Ingredients :


  • 1 cup peanuts
  • 1 cup sugar
  • 3 tbsp ghee
  • 1/2 tbsp cardamom powder





Method :

  • Roast the peanuts on a medium flame. Remove the skin and make a coarse powder.
  • Grease a large, flat plate with some ghee and keep aside.
  • Heat ghee in a non-stick pan then add sugar. Heat on a medium/low flame, mixing it continuously.
  • Melt the sugar/brown sugar in a non-stick pan till it turns honey brown in colour. 
  • Turn off the heat and immediately add the roasted peanuts with a pinch of cardamon powder and mix thoroughly. 
  • Immediately pour this mixture onto the previously greased plate.
  • Roll the mixture flat to 1 cm in thickness.
  • Immediately cut into squares with a greased knife. 
  • After it cools, separate the pieces and store in air tight containers.





Note :

  • These can also be made with jaggery. When jaggery is used, do not use ghee.
  • Mixture should not be allowed to cool before spreading.
  • You can make the same chikkis with sesame seeds, cashews and other nuts too.
