KOFTA CURRY

Kofta  is a Middle Eastern, South Asian and Balkan meatball or meatloaf. In the simplest form, koftas consist of balls of minced or ground meat—usually beef or lamb—mixed with spices and/or onions. In India, Pakistan, Kurdistan, Turkey and Iran, koftas are usually made of lamb, beef, mutton or chicken, whereas Greek and Cypriot varieties are usually made of beef, veal, pork or mixtures of them. They are often shaped into meatballs which are prepared with a mixture of ground meat, rice and leeks, and served dry. In Iran and Pakistan, koftas are served with a spiced gravy, as dry versions are considered to be kebabs. In India, vegetarian varieties, like lauki kofta and shahi aloo kofta, are popular, as religious beliefs generally forbid consumption of meat. Shrimp and fish koftas are found in South India, coastal Pakistan, and in some parts of the Persian Gulf states 
 

 




KOFTAS WITH PANEER 
 
Ingredients 


  • paneer grated-250gms
  • maida-3tblsp
  • baking powder or cooking soda-1/4 tsp
  • green chillies-3
  • corriander leaves-few
  • dhania powder-1 tsp
  • red chilli powder-1/2 tsp
  • garam masala powder-1/4 tsp
  • ginger- garlic paste-1 tsp
  • khova-50 gms
  • salt-to taste 

Method 
 
Knead above ingredients except khova well,use khova for filling,make round or ablong balls an deep fry in oil.


KOFATS WITH POTATO 

Ingredients 


  • aloo boiled and mashed-4
  • bread crumbs-4 tblsp
  • green chillies-3
  • corriander leaves-few chopped
  • dhania powder-1 tsp
  • red chilli powder-1/2 tsp
  • garam masala powder-1/4 tsp
  • salt-to taste
  • ginger-garlic paste-1 tsp 

Method 

Mix all the ingredients well and follow as per paneer koftas.


KOFTAS WITH MIXED VEGETABLES 

 
Ingredients 


  • cooked green peas-1/2 cup
  • carrot chopped and cooked-1
  • beans chopped and cooked-10 to 12
  • cauliflower florets cooked-12
  • bread slices-1 or 2 (soak and took out from water)
  • green chillies-3
  • corriander leaves-few chopped
  • dhania powder-1 tsp
  • red chilli powder-1/2 tsp
  • garam masala powder-1/4 tsp
  • salt to taste
  • ginger- garlic paste-1 tsp 
Method 
 
Mix all the ingredients well follow as per paneer koftas 

 
FOR GRAVY 

 Ingredients
  • onion paste-1/2 cup
  • tomato puree-1 cup
  • melon seeds-1 tblsp
  • cashew nuts-25 gms
  • chironji-1 tblsp
  • red chilli powder-2 tsp
  • shah jeera-1/2 tsp
  • garam masala powder-1/2 tsp
  • jeera powder-1 tsp
  • ginger-garlic paste-1 tsp
  • green chillies-4
  • fresh cream-1/2 cup
  • corriander leaves 
  •  make a paste of melonseeds ,cashew,and chironji

METHOD 

  1. In a kadai,take 2 tblsp of oil and 2 tblsp of ghee ,add shah jeera,when it splutters add onion paste,ginger-garlic paste,green chillies,tomato puree,dry masalas,and ground paste,and fry well.
  2. add 2 to 3 cups of water and salt,and cook for some time till water reduces to 1 1/2cup.
  3. add kotas ,fresh cream and boil
  4. sprinkle corriander leaves.
