MISHTI DOI



Mishti Doi is synonymous with Bengal in East India. The Bengalis are famous for their sweet preparations and Mishti Doi is among their most well known desserts. It is made of full cream milk and sugar, it is a delight for those who are born with a sweet tooth.














Ingredients:

  • 1 liter full cream milk
  • 3-4 tbsps yoghurt
  • 250 gms sugar/jaggery




Method:

  • Pour the milk in a thick bottom vessel and start heating over low flame
  • As it starts boiling add 150 gms of sugar to milk. Stir frequently to prevent the milk from sticking.
  • Boil the milk till it is reduced to almost 40 % and becomes thick and light brown in color.
  • Place the remaining 100gms of sugar in heavy bottom vessel with 25ml of water and melt on low heat.
  • Heat till the sugar melts and attains a golden brown color
  • Gradually add this molten sugar mixture to the milk and boil for another 15 minutes over low flame
  • Take out of flame and let it become lukewarm
  • Transfer the mixture into the earthen pot and add the yogurt.
  • Cover and allow setting for 8 to 12 hours at a warm place, do not open or move the pot during this period.
  • Refrigerate the set dahi and serve as a dessert.
